Dear friends, welcome to Koryo House!
We are a Boston local business and we would like to introduce our authentic Korean food, which is different from the food in Korea because our food came from Koreans who were born and raised in Central Asia (Uzbekistan and Kazakhstan).
Our menu has a wide variety of salads, vegetable rolls, and main dishes with noodles or rice. However, we would like to draw your attention to our main salad – “Morkovcha” (Korean-style carrots) because the history of our salads begins with this carrot salad.

It was after the migration of Koreans from the Far East (eastern part of Russia) to Central Asia (Kazakhstan and Uzbekistan) in 1937 due to political repressions. Chinese cabbage was unavailable in these regions to make the original kimchi, and to adapt, they turned to more accessible and affordable ingredients, which led to the creation of “Morkovcha” – a salad made from grated carrots, seasoned with vinegar, garlic, and a mixture of spices.
This is how Korean-Style Carrots “MORKOVCHA” became an adaptation of the classic Kimchi using local ingredients and a preparation method common among the Korean community in the Soviet Union, known as “Koryo Saram”.

Nearly 100 years later, over 50 distinct salads have been developed by Koryo Saram. Since then, these salads have gained popularity in many countries due to their unique taste and availability of ingredients. Today, “Morkovcha” and its variations are widely associated with Korean cuisine, even though they did not originate in Korea.
